I hate buying mayonnaise because sometimes we use it all up quickly, and other times we find it turning funky colors in the refrigerator. This recipe for easy homemade mayonnaise makes about 1 cup, so you can make it as you need it. If you use a lot of mayo, this recipe could save you tons over the typical store bought mayonnaise.
You'll need...
2 egg yolks
2 tsp dijon mustard
2 tbsp white vinegar
3/4 tsp salt
1 cup vegetable oil or olive oil
Place the first four ingredients into a food processor and pulse until creamy and combined. Slowly add the oil as you continue to pulse until you reach a smooth and creamy consistency. I store unused mayonnaise in mason jars in my refrigerator. This will stay good for about a week.
You could also add other flavors to the food processor like sundried tomatoes, pesto, or roasted red peppers to make flavored mayo.
