I love making homemade soups with garden fresh veggies and lean meats. We often pair them with sandwiches or salads for a quick dinner or a tasty lunch. The one thing I do hate, however, is buying vegetable broth. One thing I hate even more than buying vegetable broth is forgetting I have it in the pantry and finding that it has gone bad. This recipe for homemade vegetable broth powder not only saves you money on the initial idea of vegetable broth, but because it is in powder form it is also shelf-stable. This has our family written all over it.
You'll Need:
2 cups Nutritional yeast
1/2 cup sea salt
2 tbsp onion powder
1 tbsp turmeric
2 tsp marjoram, optional
2 tsp dried powdered lemon peel, optional
1 tsp celery seed
1 tsp basil
1 tsp powdered thyme
1 tbsp dried parsley
Place all, except parsley, in a food processor or blender. Blend until they have been powdered together. Add parsley and pulse to chop. Store in an airtight container.
To make broth:
Use 1 tbsp of powder for every quart of water used in your soup broth.
