Instead of Chinese Takeout...

I am so proud of myself for resisting temptation yesterday! I found myself very tempted to order Chinese takeout and charge it to my credit card. This temptation was only reinforced when I watched a Chinese delivery car pull up to my neighbors house. At this point three things ran through my head: 
1.  You just put a down payment on your wedding gown and you need to save up the second half to pay it off
2. You just purchased a wedding gown so you should really watch what you are eating
3. There is something here in the house you can make for dinner

Instead of charging greasy, unhealthy Chinese food to my credit card that I would have probably ended up paying double for thanks to interest, I made my own healthier stir fry for dinner. This is really easy and inexpensive to make! 

You'll need:

* White rice (I used Uncle Ben's boil in a bag rice)
* Frozen stir fry veggies (I used a mix of sugar snap peas, carrots, red pepper, broccoli, baby corn, and water chestnuts)
* Low sodium soy sauce
* Onion powder
* Cayenne pepper
* Black pepper
* Boneless, skinless chicken breasts

Quantities depend on how many people you are feeding. 

Boil the rice to soften based on package directions. While the rice is cooking, cut the chicken into bite size pieces and cook through. Season the chicken with onion powder and cayenne pepper. Cook the frozen veggies in a skilled with black pepper and low-sodium soy sauce. Add soy sauce to taste to the rice and mix in veggies and chicken. If you prefer fried rice over steamed, heat 2 tablespoons of canola oil in the bottom of a large skillet or wok. Poor everything into the skillet once the oil is heated and toss to coat in oil. Pan fry it until the rice turns golden. 

Either way you cook it, this recipe is delicious! It is also much cheaper than ordering takeout! Each time Thomas and I order takeout, we spend about $25. I made our stir-fry dinner last night for only about $5 and we were both able to eat our fill and have leftovers for lunch today.
